On my 235 I think I used (2) 3/4 inch thickness of foam glued together with micro.  There is very little taper in the plan view and I think that it is about 4 to 5 inches high at the back.  The rudder is extended down to match.  I used a micro slurry and 2 or 3 Bid over the foam overlapping onto the fuselage about 2 inches.  I then used regular micro to blend in to the fuselage.  On the rudder extension, you might want to consider what the shape should be in the side view.  I have seen the rudder line extended straight back until it intersected the rear line. That looks good but when you rotate for take off the trailing edge hits the runway with considerably less rotation then if you start raising the bottom line from the rear of the Ventral fin so that when you lower the tail to the ground, the rear of the ventral fin and the trailing edge of the rudder touch the ground at the same time.
