Curtis Krouse asked about flipping the 2-seater.  The only additional advice I
can add to what was provided is to decide on whether you will be opting for the
hydraulic inboard gear door feature.  If so, you will be installing additional
hydraulics in the well which you should do with the plane inverted. Unfortunately, I put the rudder on too soon and am now spending lots of time on
my creeper.
Thinking this through, the only place the where the rudder and wings interact in
the building process (potentially affecting build order) has to do with the
hardware connecting them (i.e. the rudder cables vs. the many components tied to
the wing and it's options such as outback gear flap components.)  The horizontal
stabilizer and elevator involve a few more interactions due to the push rods. You could certainly install the horizontal stabilizer per plans sequence and
still be able to flip the plane easily (relatively speaking).  You will be
routing the rudder cable at that time too. So, it sure seems you can leave at least the rudder and vertical fin to the end
(but before rudder pedal installation and before brake line routing).
