 Am considering retro fitting the forward hinge canopy (from parallelogram
type). A local builder tells me it would take him up to 3 months and hundreds
of hours. Any comments?

It kind of depends on if you are a first time builder, or have done it previously.  The 'month' time period is really arbitrary as it based on how many hours a day you spend thinking and working.  The first timer will spend 100's of hours if 'think' time is counted.  The 'done it before' builder will use up a 100 or 200 hours.  
 
Retrofitting will take longer than when on new construction on the account of everything that is in the way.  Plus cutting into a finished tank for retrofitting adds more time.  Finish work with painting adds time also.  The canopy and header tank (if removable) will be turned inverted and jigged up together to get proper alignment.
