and asked about insuring a (theoretical) 360 worth about $100K.

the value would probably be higher.
Don't count on that. In fact, I would say that you can count on it not being so. Even though two vehicles may look similar, their actuarial data may be totally different. This applies to airplanes, cars and most probably boats as well (never owned a boat, so I don't know for sure).
If you want insurance for a Legacy, ask for quotes for a legacy -- don't extrapolate from quotes for other "similar" airplanes.
