I just asked my painter the same question.  Specifically, I asked what
allowance should I allow between unpainted surfaces (such as the aileron to
flap gap) to allow for each surface to have its own primer, color coat, and
final clear coat.  His answer was the thickness of four business cards which
measures to .045".   So your guess of .040 to .050" should be good.  I've
been using two layers of 80 grit sandwiched together (facing same direction)
to get .050" thickness.
