Copy the current working A MAP to B.
Test that she runs ok on B
Take off & climb to 5000ft or so
Select mode 1/computer A
start at medium rpm, adjust mixture, match setting on program know, push
store.
  increase rpm by 100 & repeat
    repeat
go back to at medium rpm, then proceed downwards by 100 rpm at a time as
above

Well, to be honest, I haven't done much tuning in flight yet.  From what I can tell, tying the plane down, and running it on the ground has given me good numbers.  What you describe, is pretty much how I do the original round of tuning, but once that's over, I use mode 9, to adjust the mixture a little at a time, particularly for anything I need to do in flight.  Mode 9 offers less opportunity for sudden surprises :-)
