Automotive thermostats are set to open at 190-195 F.  200-210 shouldn't be any cause for alarm.  I would put a red line above 220.  As to oil, you want to keep the moisture vaporized and venting over the side, so anything below 180 is too cold, and I don't think red line would be much below 250.  I aim to shoot for 200-215 F for oil temps.
