Chris,
Concerning your RPM problem. My Renesis is doing the same thing.  Plus, at staging, it coughs like an old smoker trying to cough up a lung and the higher the RPM goes the less the mixture monitor displays.  At staging it is only on about 5% of the time.  I have talked with Tracy and he has dispatched the FIX, at least a partial one.   His other 2 fixes have been dead on!  Should arrive today or tomorrow.  The tentative thinking is that electrical Noise is causing the mixture and the rpm portions to scramble their little silicone brains.  No mixture display and it is real hard to lean the mixture.  Have you tried putting a 1000 ohm resistor across the CAS.   This solved my starting problem.
About your restart problems.  When the engine compartment gets hot,  my fuel pumps vapor lock for a while.  I can hear mine do it.   Yours may be too far away.  Check the fuel pressure.  I will work on this after I get it running well.  Already have a remote thermometer so I  can get some temperature data in the pump compartment and a cooling duct.
