Where are you guys measuring the oil temp? I believe some are putting temp sensor on a fitting at the oil filter. Is this correct? Does everyone sense the water temp at the water pump housing? 
 
 
The general rule for water temp is to measure it as it leaves the pump housing to go to the radiator.  This is the hottest it ever gets.   
 
I think you'll find that most everyone is sensing oil temp after the cooler, as it goes into the engine.  I would think the oil filter housing is just fine, since it really hasn't done anything but go up the rear housing at that point.  The general "spec" is no more than 210F into the engine.  While it does seem odd to measure the hottest water temp, and the coolest oil temp, keep in mind that you really can't measure the hottest oil temp because it drains back to the pan from various locations.  There is a temp sensor in the pan, but I don't think too many people believe it gives the best results.
