While building my 235, many years ago, I was confined to a very small airplane factory too. So small that I couldn't afford to have the cutting table and lay-up tables in the way - so I used a couple of large sized hollow cored doors from the local hardware store, hinged to the wall with a couple of 2 x 4 legs also on hinges so they could fold when the door was swung up out of the way. I attached a straight 2 x 4 along the outer edge to insure that the tables would stay straight. Each door was surfaced with brown pressed-board, also from the hardware store, (the same stuff folks use for peg-board, but without the holes). The cutting table lasted for the the entire project and the lay-up table had to be replaced once as it was getting pretty grungy - even though I cleaned it by wiping down with MEK after each use. Worked fine for me and was cheap as they come. The surface is easy on the pizza-cutter blades, too.
