I've had similar
experience to Craig. I was not able to take one of the courses and had to
schedule with Pete individually. I got instruction when I needed it on my
schedule. I did plan a couple of months in advance in order to make it
happen easily. Pete made the instruction I needed it to happen.
I've been trying to get Pete to come for a
flight in my glider and have not been able to get him to break free for that.
Perhaps he is just too backed up trying to keep us all in the air.

My wife and I do not share your frustration scheduling at all. In the
two years we have been training, we have found Pete Z. and HPAT very
accommodating.
A couple of points that have made it easier for us to schedule:
1) Make sure your airplane is ready -
cancellations ruin schedules and this is the #1 cause of
frustration for everybody
2) Email and have patience. If you
don't hear back after a week, give Pete a call.
3) Try to arrange recurrent training at one
of the HPAT training locations: Sebring, Napa, Redmond, etc.
In Napa, there were 5 instructors.
