Since I haven't built the tail section yet...I can't speak from experience, but I think that the plane would be a lot harder to handle without the tail. And it seems to me that there is very little fill work on the bottom of the tail section. So, I recommend that you flip the bird before you build the tail section. When flipping the plane without the tail section built, it only requires one person to 'man' the tail section to accomplish the flip.
