I had a similar problem with the probe mounted in the fuselage side just behind the cowl seam.  Insulation notwithstanding, even the wires can be heated in the cockpit and transmit some heat to the sensor.  I finally mounted mine just ahead of the upper gear leg door so that the probe is on the underside of the wing (out of the sun when upright) and the probe case and wire are in the cold-cold wheel well.  This location is very fast to respond to ambient temperature changes (good to monitor during a climb) and, after some time in the air, corresponds pretty well to the slightly higher temps sensed by the VM EPI800 OAT probe in the flap close-out area.  That probe extends into the gap between the flap and the fuselage when the flap is retracted.
