Do you have ANY headspace in that beast at all (as in, an air pocket).. 
whats happening in your overflow bottle.. are you venting coolant into 
the overflow when warming up.. when this pressure reading goes up..

where are you measuring coolant pressure?

Fluid is not very compressible, but it still expands when heated.
