No need to get nasty - old men can do, well, most of the time - that is unless we forget, err ... what the H---- were we talking about? {:>)
 
Plasma cutter, uh?  Wonder what I could tell the wife I could repair around the house with one?
 
I would probably use 304 as that has stood up well in my 384 hours of run time.

looking to re-do my two hole exhaust system into a single tube.  Am looking for a source of 13B exhaust flange stainless steel.  I am aware that Mazdatrix has a Racing Beat Flange - however, I do not believe it is Stainless steel.  Anybody have a source? 
 
You're right about that flange not being stainless.  It's about a half inch mild steel, and it's heavy. 
 
I never could find any stainless ones, so I ended up making my own out of 1/4" 321 SS, which was probably overkill in thickness and grade of stainless.  I decided it was easier, and lighter to make two separate flanges, rather than try to copy the one piece flange.  As you see, the plasma cutter was a key ingredient in the process.  You'd be an (even) old (er) man if you try to cut this with a hacksaw :-)
