I went back and verified the graph, and it was for a Weber carb 13B.  So, mixture would not be tunable on the fly.  None the less, I would think that you would want to err on the high side.  You might be able to fudge it some by increasing the pressure a bit.

I appreciate the concern, but I'll probably be able to tell on the ground if there's a problem with the size, so it shouldn't be a safety issue.   I should probably keep the injectors smaller than they need to be, so I don't show up the PP boys too badly :-)
