Rusty mentioned that in using the open loop
system that the quantities of how much fuel to inject are stored in a look
up table and it is possible to change these values to "tweak" or "tune" the
system.  How is this done?

The EC-2 comes with a couple different pre-set defaults for the table, but they're just meant to get you running on your initial starts.   The process to tune the EC-2 requires a manifold pressure gauge, and ideally a mixture readout of some sort.  You tie the airplane down, and adjust the throttle in small increments of manifold pressure.  For each MAP setting, you adjust the mixture for the desired air fuel ratio, and save it to the table.  Once you go through all the settings, you've made your own look-up table, specific to your individual engine installation.  It usually takes a bit more fiddling (at least for me), but that's the procedure.
