Am I better off buying the cowl from Vans with the snorkel out front for extra cooling?

As Dave said, you should have room for a turbo in an RV-8 cowl.  I believe Todd even has his turbo and muffler in his RV-9 cowl.  I envy anyone with that much acreage under the cowl.
 
Unless you love building large fiberglass things from scratch, or you plan to put coolers somewhere other than under the cowl, you'll be far better off to start with a stock cowl.  I'm not sure what you mean by "snorkel out front for extra cooling", but when I built my RV-8, there were two cowls, depending on which engine you had.  The carb version had a chin scoop for the carb.  The injected version got induction air from above the baffles, so it had no chin scoop.  Since the chin scoop for the carb would almost certainly not do you much good, I would recommend getting the injected cowl, with no scoop.
