I live in Baltimore, where the heat is not what it is in Texas - but the
combination of heat and humidity (and air quality) can be a pretty
oppressive.
I do not have air conditioning but I designate my co-pilot as the "air
quality management officer" - his/her only duty is to keep the canopy
cracked while during taxi (approach plates do the trick). This makes a
MAJOR difference in comfort!
The second thing that I have is a sun blocker from Koger:

I think these are an essential item for the Legacy. These effectively block
the sun coming into the Legacy (Greenhouse) cockpit.
After you get up to altitude with your vents open and your sun blocker in
place you should be OK
I suggest that you consider NOT putting in A/C and use a combination of "air
quality management" and a sun blocker. KISS

You might want to talk to RDD in Redmond. They have put in a few.
That being said, I'd really discourage you from putting in AC. It is fairly
heavy and really reduces your useful load. A lot of Legacy's including mine
end up heavy and it can limit your options.
