| There should be no effect on handling qualities by using a center stick as long as the throws and lever arms are maintained. There are many ways, however, that this could be screwed up. I'm not saying that you should not do this, rather, I'm sayng that you should not be casual about it. (Not that I think you would be...)
I would also recommend making a custom weldment for the crossover up front. I don't think you could do a good job modifying what you've got. Replacing it outright is the way to go, and frankly, the whole enchilada should be pretty simple and not very costly to accomplish.
