Yes, the 320/360 engine can be shimmed by putting area washers between the engine mount pad on the engine and the rubber isolator (the "Lord mount").  The common wisdom (at least we had a lot of discussion on this back in the old days) was that the mount would sag in the first 25 hours of operation, but not much after that.  The amount to shim was two area washers (AN970-7) per Lord mount.  Some guys would add the washers to the top mounts before flying to push the spinner down, and withdraw them after 25 hours.  Others would let the engine sag and then add the washers on the bottom mounts to push the spinner back up.  I will take a picture tomorrow and email it to you.  I have shims at the top mount points, and will remove them after 25 hours or so.  Oh, and your airplane looks stupendous!

My goal is to run my engine this summer.  My list of things to do is becoming quite short.  I'm finally just about done with the baffling and Chris Zavatson's plenum.  I'll post some pictures in a few days because it's looking really good (Thanks, Chris!) and I want to show it off.  After that, all I have to do is take my completed parts off the shelf and reinstall them, then do bodywork and paint.  Oh, and install the brake lines -- I guess I need those.  So flying next summer finally seems achievable.  (Realistically I have some more things to do than just that, like bonding on the wingtips, balancing one aileron, installing cowling fasteners because I don't want to fly with all those clecoes, but really there's not much left to do).
