Brad,
I made tiedown rings like the ones you're talking about from parts I got from McMaster Carr (www.mcmaster.com).
The stainless quick release pins are 5/16" diameter and come in several lengths. I just removed the small D ring at the top of them. They fit right into the threaded tiedown anchors that come with all Lancair kits. Mine were part number 92384A and you can find them on page 3233 of McMaster's online catalog. You'll need to get a measurement of the anchor hole depth to determine the pin length you need to order.
The stainless forged eye nuts I got are no longer available, but there are several similar ones on page 1425 of the catalog. We had to ream out the hole in it to accomodate the pin, which we hysoled into the hole. Since the rings are stainless, reaming them was a pain, but we got it done with a carbide bit and a drill press.
Attached is a photo of one of my rings. By the way, you can still screw the stock tie downs into the anchors if you prefer.
