Richard,
I suggest you get a copy of AC43-13 that has answers to all the questions you asked, and in my case others that I didn't think to ask. If you follow it, you're building to the standards required for maintaining certified aircraft. Standards are less rigorous for amateur built aircraft certified as experimental.

Are there any general guidelines to distances between securing tubing and wiring bundles ?

i.e.  Fuel Lines, Break/Hydraulic Lines,  Pitot Static, Battery Cables, wiring harness …
