I got my grips from Infinity too. They're made at Gillespie Field in San Diego, right where I built my plane and I had a lot of interface with J.D. Newman, who runs the place. We came up with my stick configuration. My coolie runs pitch and aileron, just like all the sticks I flew in the military did. I have A/P disconect, CWS ON/OFF (S-Tec 55), PTT on the trigger, flaps on a toggle and my last button was for the starter. I say "was" because I bumped that button several times during Phase I and decided to disconnect it before I messed my starter up. All of the other switch locations have worked out great (though I rarely use CWS).
