Glad to hear you're making progress Steve.  A fixed regulator will make it harder to adjust for constant mixture across the whole range of throttle settings but should be possible.  I'm only seeing 5-10 degrees delta on water but 40-50 degrees on oil at cruise power.  I think that is typical.
