Larry you are correct, you normally want to keep the oil temp above 180F.
You do not need 212F to remove water from the oil.  Rapid evaporation will
occur at lower temperatures.  The 180F you hear refered to as the limit is
the perferred maximum rotary oil temperature AFTER its has been through the
oil cooler and before it goes into the engine again.  So the oil temp is
undoubtedly higher before it goes into the oil cooler - perhaps as much as
220-240F.
