Joe,
I'm using off-the-shelf cones for exhaust parts which are a mixture of 304
and 316 and are usually 1.6mm as a standard.

I know 321 has better resistance to heat and that .049 ( 1.25mm) is fine for
321. I also feel that 1.6 is also fine for 304 and 316.

I would only use mild steel if I expected to change it regularily.
