     It partly depends on your preferences and tolerance and different folks
will likely recommend different values.  For temps, I started with the
values that Racing Beat published in their technical catalog - althought I
now know they are very conservative (probably too conservative for aircraft
use and particularly with the newer - post 1986 blocks).  In any case they
listed 210F as max oil temp AS it comes OUT of the cooler.  They listed 180F
max for the coolant.  As I mentioned I believe this was based on the earlier
blocks and is very conservative.

I personally have 220F max as my oil temp red line and 210F Max as my
coolant temp redline.
However, I would want to know when either gets to 200F as that would give me
a little time for corrective action (perhaps), so I would probably my
annunciator to trigger at 200F for both to start with.

For fuel pressure, I like it to run about 43 psi.  I have my low pressure
redline set at 35 psi. I have found the engine will run on as little as 25
psi, but it is irratic and overly lean any time it drops below 35 psi..   I
would probably set my annunciator to alarm around 38 psi - assuming you are
running normal fuel pressure.
