I did a paper on this in my Aviation Physiology course and reviewed the GAMA publication over the weekend to see if my findings were still relevant; they seem to be. When designing a cockpit you should follow the "sweep on" rule. In other words, sweep your arm in an arc forward and up to the panel. The positive lock switches should switch on in this manner. GAMA says there are two ways to do this and they differ in how overhead switches are handled. Even if I had critical overhead switches I think "forward on" would be more obvious, as opposed to sweep-back is on. Right to left switches have no place in the cockpit. The publication also covers labeling, lighting and symbology and has many references to other sources like ACs and FARs.
