I tought a one-handed guy to fly many years ago.  He was missing his left
hand. We used a Citabria so he could hold the stick with his right hand. He
had a special device made up for his left arm that fit the throttle &
mixture knobs (left sidewall). He did very well and was one of the most
motivated students I ever had. As I recall, it required a little work with
the feds and his license was restricted to a Citabria.

Tell your friend that it CAN be done. If the guy has the motivation, it will
be a very rewarding experience for both student and instructor.
