You're sure to get a lot of good ideas for a switch to operate your wing flaps.  My Legacy's flap toggle switch is on the instrument panel and is UP-OFF-(DOWN).  To lower the flaps, I hold the switch down until the flaps are in the right place, and then take my hand off the switch and allow it to return to the spring-loaded center, OFF, position.  I takeoff with 10° of flaps; after takeoff, I move the handle to the up position, where the handle remains while I tend to other checklist items.  Near the end of the after takeoff checklist, I move the flap switch to the center, OFF, position.  Here's a photo:
 
 
The switch is on the left side of the panel because I fly with my right hand on the stick and left hand on the throttle.  (No, I'm not a contortionist; I have a second throttle on the left side of the cockpit.)  After admiring Rob Logan's beautiful gear and flap switch handles that he made, I was lucky that my machinist neighbor made one of each for me. 
 
I land with full flaps and after clearing the runway, I put the flap switch to the up position and proceed to other checklist items while the flaps come up.  Later in the after landing checklist, I move the flap switch to the center, OFF, position. 
 
This arrangement works well for me.  I didn't have enough switches on my stick grip to control the flaps from there.  Sometimes I think it would be nice to be able to do that, such as when doing tough and goes.  But I'm happy with what I have.
