I went to the Epic site to see what they have to say about where you have to build. 

 

Interestingly, they have a new model that's a 4 seater with a lavatory and wet bar!  They show a photo of the kit "as they will ship...that any builder can take away to construct and finish at their home or hangar location."

 

I'm sure the 4 seat version is to avoid the 5+ seat dividing line for complex aircraft.  I doubt the construction is much different than a IVPT.
