Matt,
It sounds like you have a large oil consumption problem and a small
temperature problem.
Maybe the temp sensor system is off calibration - you run 100 deg cooler than
my 360 while at the same time being somewhat faster.
Some cross hatching should be present on properly broken in cylinders and is
one of the features that allows proper lubrication.
Glazing is sometimes the result of high temperatures during break-in and
usually suggests that break in has not occurred correctly.
Are you still using mineral oil? If you switched to multigrade too soon
(before oil consumption stabilized) the break-in process stops.
My new cylinders "broke-in" during ground runups before the first flight. I
never saw any elevated temperatures but I ran at full power at low altitude
and left the mineral oil in for the first 50 hours anyway. I was still using
mineral oil when I ran the Airventure Cup race last year. That broke it in!
I didn't use a whole quart of oil in the last -15 hrs.
How's the compression?
Another way to increase CHT's is to advance timing. You can check that you
are not timed too far back.
It doesn't seem likely considering your excess speed problem.
I had similar trouble with an electronic ignition system and it was caused by
interference. It only gave trouble at max RPM.
Try shutting off power to everything else - process of elimination- to trace
the source. Shielding and grounding may help too.

The engine runs too cool. With 180 hours on since 0-timed, the rings have
not seated. I am burning 1 quart of oil every 2 hours.
