     I had originally considered using a carburetor instead of EFI, just for simplicity. (No high pressure fuel pumps, fuel returns, etc). I was not sure how to handle the leaning reguirements that go along with changes in altitude. I hadn't considered using an aircraft carburetor.

 
If I were going to try to use something other than EFI, it would absolutely be an Ellison throttle body.  I put one of those on my old RV-8, and it really worked great,  even when flying inverted :-)  Nothing could possibly be any simpler, though they aren't cheap.
