I wouldn't recommend only monitoring oil pan temp. You should primarily be monitoring engine oil inlet temp.
I understand that that's what is done in the car and our red-line values are based on that.
I think the cars monitor temp at the stock oil filter mount (which Bruce amputated), and they use the oil pan sensor for the idiot light I believe. I can’t see why it would make a difference where you monitored it, and to me, it seems like you’d want to see the worst case temp, which is in the pan. Since you posted your data, I can see that the spread was never over about 10C, so I’ll just keep that in mind when reading my oil temps.
As for the redline, it’s my understanding that the temps are set for the limits of the oil, not really the engine. Since we’re using synthetic oil, which Mazda does NOT recommend btw, we’re able to run hotter oil temps anyway.
All that being said, if I still had a place to measure the oil temp after the oil cooler, I certainly would. The only way to do it now would be to cobble something up, and frankly, I’m all cobbled out :-)
