I wouldn't recommend only monitoring oil pan temp. You should primarily be monitoring engine oil inlet temp.
I understand that that's what is done in the car and our
red-line values are based on that.
The spread in temps depends on the oil cooler and amount of airflow through it.

Very interesting Finn.  Thanks for sharing. Hmmm, the picture of Tracy's
EM-2 shows 4 plugs on the front.  I wonder if one of those will be data out.
Ooops, now it'll be due in October :-) 

Since I'll only be monitoring the oil temp in the pan, it was interesting to
see the oil temp diff between the pan, and the oil cooler exit.
